For the dairy cow, several genetic variants in milk proteins have been shown to influence milk curd formation and hence cheese properties (reviewed by Jakob and Puhan 1992, Ng Kwai Hang, 1998). We offer tests to detect certain genetic variants present in the genes for beta-lactoglobulin (BLG), kappa-casein (CSN3) and beta-casein (CSN2).
